Hello everyone and welcome to 2017. I hope you all enjoyed the holidays with friends and family and are eager to get more out of your ACF membership in the New Year. We have lots to talk about, so here is the latest chapter news in this long overdue newsletter.
First and foremost, the NCCA and hospitality industry as a whole lost a good friend over the weekend. Michael Birchenall, advocate of the metro DC dining scene, editor and publisher of Foodservice Monthly and all around foodie passed away on January 9th at the age of 68. The 2017-18 elections are complete and to no surprise all four positions that were running uncontested have been filled. Please welcome us in recognizing our new board for the next two years. These members will be sworn in at the next chapter meeting.

Speaking of which, we invite you to join us at Hen Quarter in Silver Spring on Tuesday, February 7th, from 3:00 to 5:00 PM. Newly recognized Worldchefs Certified Master Chef, Fred Raynaud, WCMC, WMCS will conduct a 1-hour demo on “Transglutaminase – Is Meat Glue in your Future?” Chef Raynaud is the Chief Culinary Officer of Pheast Food Group which owns Hen Quarter and a handful of other restaurant concepts within our area. He will present the following:
- Meat glue – what, how, why, etc.
- Demonstrate “Pork Belly Salmon” and a finished sous vide plate, pan seared, etc.
- Handouts on Transglutaminase (Activa RM, GS, YG)
